Hillaire is a light ruby colored CDP, opening with a pleasant black cherry bouquet. On the palate, this wine is medium bodied, well balanced, and very elegant. The flavor profile is a tasty and spicy red raspberry with notes of black pepper throughout. The finish is rather dry and its substantial tannins linger for quite sometime.
